One-dish salad

  • 1
    frozen spring vegetables
  • 1
    green apple, cored and diced
  • 1
    English cucumber, sliced
  • 250
    ham, diced
  • 250
    French salad dressing
  • salt and black pepper
  • 4
    slices white bread (crusts removed), cubed
  • oil


Place the frozen vegetables in a glass bowl and cover with plastic wrap. Pierce a few holes in the plastic and microwave the frozen vegetables on 100 per cent power until cooked but still crisp. Alternatively, cook the frozen vegetables in a little water on the stove. Mix the vegetables with the apple, cucumber and ham. Add the salad dressing, cover partially with plastic wrap and chill thoroughly. Season well with salt and black pepper. Meanwhile, fry the bread cubes in a little oil until brown and crisp. Drain on paper towelling. Serve cold with fresh bread or in pita bread. Serves 4-6.
