Ingredients (11)

500.00 ml sugar
4.00 eggs — extra large, whisked
720.00 g flour — cake
30.00 ml mixed spice — ground
5.00 ml cloves
7.00 ml cinnamon — ground
7.00 ml Bicarbonate of soda
7.00 ml Cream of tartar
125.00 ml milk
250.00 ml butter — or lard, melted
125.00 ml port — dark

Method:

Beat the sugar and eggs together until light. Sift the cake flour and spices
together and add. Dissolve the bicarbonate of soda and cream of tartar in the milk and add. Stir the melted butter or fat into the port and add to the other ingredients. Mix well to form a soft dough, cover and chill overnight.
Roll out the dough to a thickness of 5 mm and cut out different shapes with a cookie cutter. Bake in a preheated oven of 180 ºC for about 12-15 minutes or until done. Cool slightly on the baking sheets before arranging on a cooling rack to cool completely. Store in airtight containers.
Makes about 160 cookies.
