Ingredients (7)

800.00 g white sugar
500.00 g butter — soft
5.00 ml vanilla — essence
8.00 eggs — large
1.75 kg flour — cake
45.00 ml Baking powder
5.00 ml salt

Method:

Preheat oven to 190 &degC.
Cream together sugar, butter and vanilla essence.
Add eggs one by one and beat very well after each egg has been added.
Mix cake flour, baking powder and salt and add to egg mixture spoon by spoon.
The mixture will be soft and runny.
Refrigerate for one hour or more.
Roll out dough between two plastic sheets and cut out shapes with cookie cutters or use a hand biscuit maker.
Bake for 16 to 20 minutes.
Cool and store in an airtight container.
Serve garnished with a little mascarpone cheese and glazed orange peel.
VARIATION
Replace the cake flour with nutty wheat, oats, sunflower seeds, all bran flakes, digestive bran and coconut – choose your own quantity to add up to 1.75 kg.
Serve garnished with thinly sliced watermelon preserve and Brie cheese.
