Ingredients (16)

750.00 g apples — Granny Smith, peeled and cored
125.00 ml honey
125.00 ml orange juice
1.00 cinnamon — stick
5.00 ml oranges — zest only
5.00 ml lemon juice
30.00 ml brandy
BUTTERMILK BATTER
190.00 ml flour — cake
10.00 ml Baking powder
salt — just a pinch
30.00 ml butter — melted
190.00 ml Buttermilk
2.00 eggs
125.00 ml sugar
Glaze
30.00 ml butter
30.00 ml honey

Method:

Cut apples into segments and place in saucepan with next 6 ingredients, cover and simmer until tender. Remove from stove and strain apples, if necessary (apples mustn’t be too watery). Spray 6 small moulds with non-stick cooking spray.
BUTTERMILK BATTER: Sift flour, baking powder and salt into a mixing bowl. Beat remaining ingredients thoroughly, then fold in flour mixture to make a smooth batter.
Pour a little batter into base of moulds, top with a layer of apples and cover with remaining batter.
Bake at 180 ºC for30 to 40 minutes, or until well risen and golden brown.
GLAZE: Melt butter, mix in honey and pour over puddings immediately after they come from the oven.
Cool puddings and unmould, if desired. Serve immediately or reheat in the oven or microwave oven.
Serve with custard or cream flavoured with brandy or Van der Hum liqueur.
