230.00 g margarine
420.00 g castor sugar
1.00 eggs — extra-large
10.00 ml golden syrup
10.00 ml almond essence
25.00 ml water — boiled
10.00 ml Bicarbonate of soda
350.00 g flour — self-raising
300.00 g oats

Method:

Preheat the oven to 180 ºC (350 ºF). Grease a baking sheet with margarine. Cream the margarine and castor sugar together until light and creamy. Add the egg and mix well. Blend the golden syrup, almond essence, boiling water and bicarbonate of soda and add to the margarine mixture. Also add the sifted self-raising flour and finally the oats. Mix well. Roll into walnut-sized balls and place reasonably far apart on the baking sheet. Bake for eight minutes or until the cookies are golden. Cool on the baking sheet before transferring to a wire rack.
Makes about 80 cookies.
