270.00 g oat bran
50.00 g brown sugar
60.00 ml raisins — finely chopped dried fruit
12.00 ml Baking powder
5.00 ml salt — optional
315.00 ml milk — low-fat
2.00 eggs — whisked
25.00 ml oil
60.00 ml jam — fruit, reduced sugar

Method:

Preheat the oven to 200 ºC (400 ºF). Grease the base of a 12-hollow muffin tin with margarine. Combine all the dry ingredients in a bowl. Blend the milk, eggs and oil together stirring well. Add to the dry ingredients and mix lightly. Three-quarter fill each hollow in the muffin tin with the mixture. Top each with a teaspoonful of fruit spread and top this with more muffin mixture. Bake for 15 – 20 minutes or until done and golden brown on top. Serve hot with low-fat margarine.
Makes 12 muffins.
