Oat and banana muffins

Ingredients (14)

1 cup oats
1/2 cup milk
1/4 cup Buttermilk
1 eggs — beaten
1/4 cup sunflower oil
1/4 cup white sugar
1 bananas
1/2 cup flour — white
1/2 cup flour — nutty wheat
3 tsp Baking powder
1 tsp cinnamon — ground
salt — just a pinch
TO SERVE:
butter
honeycomb — or honey

Method:

Preheat oven to 200ºC. Soak the oats in the milk and buttermilk for 30 minutes.

Combine egg, oil, sugar and mashed banana and beat until smooth. Stir into the oats mixture.

Combine the flour, baking powder, cinnamon and salt in a second mixing bowl and make a well in the centre.

Pour the banana-oats mixture into the well and stir lightly (just until dry ingredients are moistened).

Grease muffin pans or line with baking paper. Spoon in batter, half filling each cup.

Bake for 15 minutes until golden. Split open; serve warm with butter and honey.
