Nyekoe (Corn rice and beans)

  • 250
    dry sugar beans
  • water
  • 500
    corn rice
  • 60
  • salt and pepper to taste
  • fat


1. Place sugar beans in a bowl and cover completely with water. Allow to soak overnight. 2. In another saucepan bring water to the boil and cook drained beans for one hour. 3. Add corn rice, top up with water if necessary, cook gently for one more hour. 4. Stir in fat, season with salt and pepper.
