Nutty wafers

  • 6
    extra-large egg whites
  • 250
    castor sugar
  • 250
    cake flour
  • 150
    mixed nuts, coarsely chopped


Preheat oven to 180 °C.
Grease a medium-size cake tin with non-stick spray.
Whisk the egg whites until soft peaks form.
Beat in the castor sugar by the spoonful, beating continuously.
Using a spatula, fold in the cake flour and nuts.
Pour into the prepared tin and bake for 45 to 60 minutes.
Leave to cool before slicing thinly using a serrated knife.
Arrange on a baking sheet in a single layer and dry out at 100 °C.
Store in an airtight container.
