Ingredients (14)

250.00 ml rice — brown
500.00 ml stock — vegetable
35.00 ml sunflower oil
10.00 ml fresh ginger — finely chopped
10.00 ml garlic — cloves, crushed
2.00 leeks — sliced
40.00 ml soy sauce
40.00 ml honey
1.00 red pepper — sliced
1.00 yellow pepper — cut into strips
2.00 celery stalks — sliced
200.00 g broccoli — cut into florets
250.00 g brown mushrooms — sliced
50.00 g peanuts — roasted

Method:

1. Cook the rice in the vegetable stock. Drain and set aside.
2. Heat oil in a large frying pan or wok and fry ginger and garlic for a minute. Add the leeks, soy sauce and honey and stir-fry for a minute.
3. Add remaining vegetables, except the mushrooms, and stir-fry for a further 5 minutes.
4. Add mushrooms and drained rice and stir-fry until mushrooms are tender. Sprinkle with the roasted nuts, season to taste and serve.
