Ingredients (11)

130.00 g margarine — soft
140.00 g brown sugar
245.00 g flour — white bread
10.00 ml Bicarbonate of soda
2.00 ml salt
80.00 ml digestive bran
2.00 eggs — large
250.00 ml yoghurt — natural
TOPPING
45.00 ml brown sugar
10.00 ml cinnamon — ground
50.00 g pecan nuts — chopped

Method:

Preheat oven to 180 ºC. Grease and line a 900 g (13 x 23 cm) loaf tin. Cream margarine and sugar together until light. Sift in flour, bicarbonate of soda and salt. Add bran. Mix eggs and yoghurt together and add to the flour mixture. Stir all the ingredients together until well mixed.
Spoon half of the mixture into prepared loaf tin. Mix topping ingredients together and sprinkle half over bread mixture in tin. Spoon remaining bread mixture into tin and top with remaining topping.
Bake in the oven for 45 minutes or until a skewer inserted into the centre comes out clean. Leave bread in tin for 5 minutes, then turn out and peel off lining paper. Slice and serve warm, spread with butter or margarine.
Makes 1 loaf.
