    soft butter

    cake flour

    eggs, hard-boiled and grated

    grated Cheddar cheese

    egg, beaten
  • a little cold water

    salted peanuts, chopped

    mixed spice

Preheat the oven to 180 ºC (350 ºF). Spray a baking tray with non-stick spray. Beat the butter until creamy. Add the cake flour, salt and cayenne pepper and mix well. Add the grated eggs and Cheddar cheese and mix lightly. Add the beaten egg and a little cold water, if necessary, to form a stiff dough. Press the dough in to a ball, wrap in plastic wrap and chill for 30 minutes in the fridge. On a floured surface, roll the dough into a rectangle about 1 cm thick. Sprinkle the chopped peanuts and mixed spice over the dough. Roll a rolling pin over the surface to press the chopped peanuts into the dough. Roll up the dough, place the roll on the baking tray and chill for 20 minutes. Cut the roll into 1 cm thick slices and arrange on the baking tray. Bake for 30-40 minutes or until done and slightly browned. Cool. Makes 12-15 slices.
