Nut-crumbed salmon

  • 1
    large egg white, beaten
  • 4
    salmon fillets (about 175g each)
  • salt
  • peper
  • 125
    cashew nuts, crushed
  • 30
    olive oil


1. Season the salmon with salt and pepper and dip fish into egg white. Spread the nuts on a plate and roll the salmon in it, making sure all sides are coated.
2. Heat the oil in a large frying pan and grill the salmon fillets for 3-4 minutes on each side, until golden. Serve with a salad.
