Ingredients (12)

125.00 g butter
375.00 ml white sugar
2.00 eggs — large, beaten
375.00 ml flour — cake
5.00 ml Bicarbonate of soda
3.00 ml salt
250.00 ml bananas — mashed
125.00 ml mixed nuts — finely chopped
125.00 ml raisins — seedless
SYRUP
125.00 ml brown sugar — soft
250.00 ml milk
5.00 ml vanilla — essence

Method:

Preheat the oven to 180 ºC. Spray a medium-sized loaf tin with non-stick spray or grease well. Cream the butter and sugar together until light and fluffy. Add the eggs one by one, beating well after each addition. Sift the dry ingredients over the egg mixture, but do not mix. Add the banana, nuts and raisins to the batter. Gently combine the ingredients until just blended. Turn the batter into the prepared tin, spreading evenly. Bake for about 35-40 minutes until done or a testing skewer comes out clean. Heat the milk and sugar and simmer over low heat until the sugar has dissolved. Bring to the boil and simmer gently for about 3 minutes. Add the vanilla essence. Pour the hot syrup over the loaf as soon as it comes out of the oven. Cool in the tin. Turn out carefully as the loaf is very moist. Serve sliced.
Makes 1 medium-sized loaf.
