Norwegian apple tart

    cake flour
  • 10
    baking powder
  • pinch salt
  • 375
    white sugar
  • 2
    extra-large eggs
  • 10
    vanilla essence
  • 250
    pecan nuts, coarsely chopped
  • 4
    medium apples, peeled, cored and cubed

Preheat the oven to 180 ºC. Grease a 22 cm round ovenproof pie dish well with butter or spray with non-stick spray. Sift the cake flour, baking powder and salt together. Add the sugar and stir until mixed. Beat the eggs and vanilla essence together and add to the dry ingredients. Add the pecan nuts and apples and mix. Spoon into prepared dish and bake for about 30 minutes until golden brown and done. Serve with cream. Serves 8 to 10.
