Noodles with chicken and beans

    uncooked noodles such as tagliatelle
  • 8
    chicken breast fillets, cut into strips
  • salt
  • pepper
  • oil
  • 1
    onion, sliced
  • 2
    cloves garlic, crushed
  • 5
    dried dill
  • 425
    red kidney beans
  • 410
    butter beans
  • 425
    lima beans
  • 70
    tomato paste
  • 1
    lemon, juice


Cook the noodles in rapidly boiling salted water until just soft. Drain and set aside. Lightly season the chicken strips with salt and pepper and brown in a little oil. Remove from the pan and set aside. Sauté the onion and garlic in heated oil until soft. Add the cooked chicken and dill. Drain the canned beans, reserving the liquid from the lima beans. Add the drained beans to the chicken. Blend the bean liquid with the tomato paste and lemon juice and pour over the chicken mixture. Warm slowly until heated through. Season to taste with salt and pepper. Serve with the noodles.
