  • 250
    sifted cake flour
  • pinch salt
  • 200
    butter, chilled and cut into small cubes
  • 100
    ground almonds
  • 75
    icing sugar
  • 30
    sultanas or whole almonds


Mix all but 15 ml (1 tbsp) flour and salt. Add butter and rub with fingertips to form a coarse mixture. Add ground almonds and gradually work in icing sugar. When well mixed, form pastry into a ball and refrigerate for 10 minutes to firm. Butter and flour a baking sheet. Roll pastry out to 1,5 cm thick and cut out 4 cm diameter rounds. Press 3 sultanas or 1 whole almond in centre of each biscuit and bake at 150 ºC for 20 to 25 minutes, or until golden. TOTAL KILOJOULE COUNT: 14 075 kJ (3 365 Cal). A portion: 590 kJ (140 Cal).
