Spicy fish and noodle salad

Ingredients (14)

1 sugar snap peas — halved
250 ml mung bean sprouts
2 celery stalks — chopped
1 red pepper — deseeded and cut into thin strips
100 g noodles — glass, cooked and drained
1 can mackerel — in tomato sauce
50 ml fresh coriander — or mint, chopped
DRESSING:
40 ml sunflower oil
1 garlic — cloves, crushed
5 ml fresh ginger — grated
25 ml vinegar — malt
10 ml fish sauce
1 ml fresh chillies — deseeded and chopped
5 ml lemon — zest only

Method:

Mix the peas, sprouts, celery and red pepper together with the noodles. Break the fish into big flakes and toss gently in to the salad along with the coriander or mint.

Dressing:
Mix the oil, garlic, ginger, vinegar and fish sauce together. Add a pinch of sugar and the chilli and lemon zest. Pour the dressing over the salad and serve.
