New-style roast potatoes

    medium potatoes, washed
  • 12
    baby potatoes, washed
  • 12
    unpeeled cloves garlic
  • 90
    olive oil
  • milled black pepper
  • sea salt or coarse salt
  • a few sprigs fresh rosemary


Cut 5 mm thick slices vertically through medium potatoes, to within 1 cm of base (as you would slice when preparing garlic bread). Using your palm, firmly press down on potatoes to make a fan shape. Place all potatoes and garlic in a roasting pan. Drizzle with olive oil and season well, including inside of fanned potatoes. Scatter rosemary over and bake at 200 ºC for 50 to 60 minutes, or until tender. TOTAL KILOJOULE COUNT: 6 265 kJ (1 495 Cal). A portion: 1 045 kJ (250 Cal).
