Nectarines wrapped in proscuitto

  • 2 ripe nectarines, cut in quarters, pip removed
  • 2 slices proscuitto, parma or black forest ham
  • 1 bag of wild rocket
  • 15
    extra virgin olive oil
  • 20
    balsamic vineger


Break proscuitto slices into 8 thinner strips and wrap around each nectarine wedge.
Place rocket in a bowl and dress with balsamic vinegar and olive oil.
Arrange some rocket on 4 plates, top each plate with 2 wrapped nectarines wedges, drizzle with a bit more olive oil.
OPTIONAL: Sprinkle with bits of feta or Goats cheese
