Nectarine tartlets

  • 400
    frozen puff pastry
  • melted butter
  • 4
    large, firm, ripe nectarines or peaches
  • 30
    raspberry or strawberry jam
  • cream to serve


Roll thawed pastry out lightly on a floured surface, or press with your fingers, to 24 x 36 cm. Cut out 4 squares, each 12 x 12 cm. Place on a baking sheet. Brush with melted butter. Cut leftover pastry into 1,5 cm wide strips and use to make borders around squares. Brush borders with melted butter. Halve nectarines, remove stones and slice. Arrange in pastry squares. Melt jam and brush over fruit and pastry. Bake at 200 ºC for 20 to 30 minutes, or until pastry is risen and golden and nectarines are cooked. Serve with cream.
