Ingredients (16)

50.00 ml oil
4.00 cinnamon — stick
4.00 cardamom — pods
3.00 cloves
3.00 onion — large, chopped
30.00 ml fresh ginger — freshly grated
20.00 ml garlic — cloves, crushed
5.00 ml masala — leaves
5.00 ml turmeric — ground
10.00 ml cumin — ground
10.00 ml coriander — ground
2.00 tomatoes — peeled, finely chopped
1.00 kg mutton — pieces
4.00 potatoes — medium, peeled and halved
5.00 curry leaves — dried
20.00 ml fresh coriander — chopped

Method:

Heat oil over medium heat in a large pot. Add cinnamon, cardamom pods, cloves and onion and cook until onion is golden. Add ginger, garlic, spices and 375 ml water. Cook for 2 minutes, then add tomatoes. Cook for a further 2 minutes.
Add meat and bring to the boil. Reduce heat and simmer gently for 1 hour. Add potatoes and continue cooking until meat is tender and potatoes are cooked. Add curry leaves, coriander and salt to taste and cook for 5 minutes before serving with rice or roti. Serves 6-8.
