Ingredients (13)

oil
1.00 kg mutton — stewing chops
2.00 onions — medium, chopped
garlic — cloves, crushed
30.00 ml curry powder — mild
5.00 ml turmeric
15.00 ml jam — smooth, apricot
10.00 ml vinegar
1.00 bay leaves
450.00 g sugar beans, drained — soaked
water — lukewarm
4.00 potatoes — peeled, chopped
salt and freshly ground black pepper

Method:

Heat a heavy-based saucepan and add a little oil. Brown the chops a few at a time and remove with a slotted spoon.
Sauté; the onion and garlic in the remaining fat until brown and fragrant. Sprinkle the curry powder and turmeric over the top and sauté; for another minute.
Return the meat to the saucepan and add the seasonings and beans. Cover with lukewarm water and bring to the boil.
Cover and simmer slowly for 1 1/4 hours.
Add the potato chunks and simmer until the potatoes, beans and meat are tender and done.
Season to taste and serve with rice and tomato and onion sambal (see recipe).
