Mutton and bean curry

  • oil
  • 1
    mutton stewing chops
  • 2
    medium onions, chopped
  • clove garlic, crushed
  • 30
    mild curry powder
  • 5

    smooth apricot jam

    bay leaf

    sugar beans, soaked overnight and drained
  • lukewarm water
  • 4
    medium potatoes, peeled and cut into chunks
  • salt and ground black pepper


Heat a heavy-based saucepan and add a little oil. Brown the chops a few at a time and remove with a slotted spoon. Sauté; the onion and garlic in the remaining fat until brown and fragrant. Sprinkle the curry powder and turmeric over the top and sauté; for another minute. Return the meat to the saucepan and add the seasonings and beans. Cover with lukewarm water and bring to the boil. Cover and simmer slowly for 1 1/4 hours. Add the potato chunks and simmer until the potatoes, beans and meat are tender and done. Season to taste and serve with rice and tomato and onion sambal (see recipe).
