Ingredients (10)

45.00 ml Dijon mustard
salt and freshly ground black pepper
1.00 kg beef — fillet, trimmed
20.00 ml fresh mixed herbs — chopped
100.00 ml fresh chillies — 573
HORSERADISH MASH
6.00 potatoes — large, boiled
150.00 ml milk
25.00 ml fresh chillies — 573
30.00 ml creamed horseradish
salt and freshly ground black pepper

Method:

Preheat oven to 200 ºC. Rub mustard and seasonings over fillet, place in an ovenproof dish and layer herbs over meat. Drizzle with olive oil.
Roast for 30 minutes then remove from the oven and allow to rest for 5 minutes before carving. Serve with horseradish mash.
HORSERADISH MASH: Mash potatoes in a large mixing bowl with milk, oil, horseradish and seasoning until creamy.
