Mustard chicken

  • 8
    chicken pieces
  • salt and pepper to taste

    onion, finely chopped

    cloves garlic, crushed

    olive oil

    white wine

    white grape vinegar

    prepared mustard


Preheat the oven to 180ºC (350ºF). Spray an ovenproof dish with non-stick spray or grease with butter or margarine. Season the chicken pieces with salt and pepper to taste and arrange in the dish. Sauté the onion and garlic in the olive oil until tender. Add the white wine and sherry and simmer for a few minutes. Reduce the heat, add the remaining ingredients and simmer for a few minutes. Pour over the chicken pieces, cover with aluminium foil and bake for 1 hour or until the meat is tender and done. Remove the foil 10 minutes before the end of the baking time to brown the chicken pieces. Serve with plain rice and a salad. Serves 4-6.
