Ingredients (12)

8.00 chicken — thighs
45.00 ml flour — cake
30.00 ml fresh chillies — 573
1.00 onion — large, sliced
4.00 garlic — cloves, peeled
5.00 ml fresh rosemary
1.00 bay leaves
8.00 bacon — rindless back rasher, chopped
300.00 ml wine — white
300.00 ml stock — chicken
10.00 ml Dijon mustard
salt and freshly ground black pepper — to taste

Method:

Dust chicken with flour.
Heat oil and cook onion until softened. Add garlic, rosemary, bay leaf and bacon and stir for a few minutes.
Add chicken pieces and brown on all sides, then add wine and leave to bubble for 5 minutes. Stir in stock and mustard and cook for 15 minutes (just done) to 1 hour (well done). Season.
Serve with butter bean purée (see tips) or mashed potatoes.
