Ingredients (11)

15.00 ml sesame oil
1.00 leeks — white part only
15.00 ml fresh ginger — finely chopped
2.00 garlic — cloves, crushed
2.00 red chillies — chopped
5.00 ml brown sugar
250.00 ml wine — dry white
15.00 ml fish sauce
1.00 lime — grated rind, juice
2.50 kg fresh musels — scrubbed fresh
1.00 handfull fresh coriander — chopped

Method:

Heat the sesame oil in a large saucepan and sauté the leek until soft.

Add the ginger, garlic, chillies and sugar and sauté for 1 minute. Add the wine, fish sauce and lime rind and juice and cook for 1 minute over medium heat.

Put the scrubbed mussels into the liquid and simmer gently for 5 minutes or until the shells open.

Spoon
the mussels into dishes and serve as a tapas or starter.
