Mussel kebabs

  • 4
    fresh mussels (see tips)
  • salt and freshly ground black pepper
  • lemon juice to taste
  • flour
  • 1
    beaten egg
  • sifted white breadcrumbs
  • clarified butter (ghee) for frying


1. Steam the mussels in white wine and vegetable stock. Shell and season with salt, pepper and lemon juice. 2. Thread mussels on a skewer and dip in flour, egg and breadcrumbs. 3. Cook in clarified butter until golden. Place on a bed of bean sprouts and wild mushrooms (see recipe) and garnish with parsley and sauce remoulade (see recipe).
