Mushroom tarts

    onions, peeled and finely sliced
  • pinch brown sugar
  • garlic butter
  • 15
    parsley, chopped
  • freshly ground black pepper
  • 10
    lemon juice
  • 8
    large open fresh black mushrooms
  • 4
    baked pastry bases the size of mushrooms
  • 2
    tomatoes, thinly sliced
  • 100
    blue cheese, crumbled
  • fresh thyme leaves


20 minutes
Heat butter and water in heavy-based pan. Add onion and cook until soft. Add sugar and cook for further two minutes. Add salt and freshly ground black pepper to taste. Keep warm. Mix butter with garlic, parsley, black pepper and lemon juice. Place mushrooms on a baking tray and top each with a knob of garlic butter. Cook under preheated grill for about six minutes until tender. Place four mushrooms on four pastry bases on tray. Top with slices of tomato and grill for further two minutes. Top with onion mixture and another mushroom. Fill mushrooms with blue cheese and thyme and melt beneath grill. Serve immediately.
