Ingredients (10)

60.00 ml butter
1.00 garlic — cloves, crushed
1.00 onion — medium, finely chopped
250.00 g brown mushrooms — chopped
1.00 fresh rosemary — sprigs
30.00 ml soy sauce
30.00 ml sherry — sweet
fresh parsley — chopped
sea salt and freshly ground black pepper
250.00 g cottage cheese — smooth

Method:

Heat the butter and fry the garlic and onion until soft and fragrant. Add the mushrooms and fry until tender.
Add the remaining ingredients except the cottage cheese and simmer until most of the liquid has evaporated.
Cool, remove the rosemary sprig and stir in the cottage cheese.
Season to taste and spoon into small bowls. Chill until needed.
Garnish with fresh sprigs of parsley and serve with toast.
