Ingredients (12)

275.00 g button mushrooms
1.00 lemon juice
3.00 gherkins — large, sliced
175.00 g tomatoes — deseeded, cubed
1.00 onion — small, chopped
1.00 garlic — cloves, crushed
30.00 ml fresh parsley — finely chopped
black pepper — freshly ground
sugar — pinch
olive oil
50.00 g feta cheese — cubed
croutons — brown

Method:

1. Trim mushroom stalks level with the caps. Rinse and drain, slice, place in a bowl and sprinkle with lemon juice.
2. Add gherkins, tomatoes, onion, garlic, parsley, black pepper, sugar and olive oil and toss. Top with feta anc croûtons.
