Ingredients (11)

400.00 g rice — arborio
1.00 onion — small, chopped
400.00 g button mushrooms — sliced
400.00 g oyster mushrooms
2.00 Litres stock — vegetable or chicken
2.00 spinach — sliced
1.00 tomatoes — small, cubed
5.00 fresh basil
100.00 g butter
50.00 g parmesan cheese — grated
salt and freshly ground black pepper — to taste

Method:

Melt half the butter and sauté onions until soft. Add unwashed rice.
Add mushrooms, stirring constantly, then add stock slowly, allowing the rice to absorb it.
Add all remaining ingredients except butter and cheese.
When the rice achieves a creamy consistency, add cheese and butter and serve immediately.
