Mushroom and bacon pizza

    back bacon, chopped

    mustard seeds

    fresh mushrooms, thickly sliced
  • 10
    spring onions,
  • 4
    bought pizza bases (plain or with tomato)
  • 125
    sun-dried tomatoes in oil, coarsely chopped
  • salt and freshly ground black pepper and fresh origanum to taste

Preheat the oven to 200 ºC. Fry the bacon in its own fat until done and remove from the pan. Heat the mustard seeds in the pan fat until they start popping and add the mushrooms and spring onions. Fry until the mushrooms are no longer watery. Remove from the heat and add the bacon and tomatoes. Divide the mixture between the pizza bases and season with salt, pepper and origanum. Bake for 15-20 minutes or until heated through and serve immediately. Makes 4 medium pizzas.
