Ingredients (8)

300.00 g portobellini mushrooms — finely chopped
2.00 garlic — cloves, finely chopped
0.00 butter — for frying
250.00 ml breadcrumbs — white
45.00 ml fresh parsley — chopped
20.00 ml mixed bean sprouts
0.00 sherry
125.00 g bacon — streaky, rindless

Method:

Sauté the mushrooms and finely chopped garlic cloves in butter until soft.
Add breadcrumbs, parsley and bean sprouts.
Shape the mixture into walnut-sized balls. (If the mixture is too dry to shape, add a dash of sherry.)
Wrap a rasher or piece of rindless streaky bacon around each mushroom ball.
Secure with cocktail sticks.
Oven roast or fry until the bacon is cooked and crisp.
Serve the bites lukewarm with a creamy dip.
