Mushroom Towers

  • 25
    olive oil or butter
  • 8
    large brown (Portobello) mushrooms
  • 1
    medium brinjal, cut into 4 slices
  • salt and freshly ground black pepper to taste
  • 60
    tomato pesto
  • 2
    slices feta cheese, crumbled
  • handful fresh basil leaves
  • 12
    slices mozzarella cheese



Heat the oil or butter in a large pan and fry the mushrooms and brinjal slices until brown. Season with salt and pepper. Spoon the pesto into themushroom hollows and scatter the feta cheese on top.

Put 2-3 basil leaves on top of the pesto. Stack the ingredients as fol- lows: mushroom, slice of mozzarella, brinjal slice, slice of mozzarella, mushroom and finally a slice of mozzarella.

Microwave the towers on high until the cheese just begins to melt. Serve immediately.
