CAKE
300.00 ml muesli
250.00 ml water — boiled
125.00 g butter
125.00 ml castor sugar
190.00 ml brown sugar
2.00 eggs
5.00 ml vanilla — essence
375.00 ml flour — cake
5.00 ml Bicarbonate of soda
3.00 ml salt
5.00 ml cinnamon — ground
3.00 ml mixed spice — ground
150.00 ml milk
ICING
125.00 g butter
250.00 ml icing sugar
10.00 ml vanilla — essence
20.00 ml nescafé strong black coffee

Method:

Preheat the oven to 180 ºC. Spray a 24 cm cake tin with non-stick spray.
Mix the muesli and boiling water and leave to cool.
Cream the butter and castor and brown sugars until light and creamy. Beat in the eggs and vanilla essence. Sift together the dry ingredients.
Add the soaked muesli to the egg mixture, alternating with the sifted dry ingredients and milk. Stir and turn into the cake tin, cover with aluminium foil and bake for 1 hour. Turn out onto a wire rack to cool.
To make the icing, beat together the butter and icing sugar until light and creamy. Add the vanilla essence and coffee, beating well. Decorate the cake with the icing.
Makes a medium cake.
