Mozzarella chicken with pesto

    chicken breast fillets
  • 45

    sunflower or olive oil
  • 75
    basil pesto
  • 200
    mozzarella cheese
  • milled black pepper to taste

Cut each chicken breast in half lengthways. Place between 2 sheets of clingfilm and flatten with a rolling pin to 5 mm thick. Melt butter and oil in a large frying pan. Fry chicken for 1 to 2 minutes on each side. Spread about 15 ml (1 tbsp) pesto on each breast and top with a 5 mm thick slice of cheese. Sprinkle pepper over. Transfer chicken from pan to a baking sheet and grill until cheese melts. Add any remaining pesto to frying pan and add water. Stir until combined and pour over chicken. Serve with vegetables of your choice.
