Mozzarella chicken with pesto

4.00 chicken breast fillets
45.00 g butter
30.00 ml sunflower oil — or olive oil
75.00 ml pesto — basil
200.00 g mozzarella cheese
freshly ground black pepper
75.00 ml water

Method:

Cut each chicken breast in half lengthways. Place between 2 sheets of clingfilm and flatten with a rolling pin to 5 mm thick.
Melt butter and oil in a large frying pan. Fry chicken for 1 to 2 minutes on each side.
Spread about 15 ml (1 tbsp) pesto on each breast and top with a 5 mm thick slice of cheese. Sprinkle pepper over.
Transfer chicken from pan to a baking sheet and grill until cheese melts.
Add any remaining pesto to frying pan and add water. Stir until combined and pour over chicken.
Serve with vegetables of your choice.
