Ingredients (8)

1.00 bread — roll, halved
butter
mozzarella cheese — sliced
1.00 tomatoes — sliced
olives — black or green, halved
onion — red or white
sea salt and freshly ground black pepper
fresh chives — finely chopped

Method:

Butter one half of the bread roll.
Top with the cheese and tomato slices, followed by the olives and onion slices. Season with salt and black pepper to taste.
Sprinkle with chives and cover with the other half of the bread roll.
Wrap and pack into a lunch box or serve as a light meal with a salad made with artichokes, kiwi fruit and button mushrooms.
Moisten with an olive oil and lemon juice salad dressing.
