250.00 g raisins
15.00 ml sugar
750.00 ml water — warm
3.00 kg flour
500.00 g sugar
25.00 ml aniseed
250.00 g butter
2.00 eggs — large
600.00 ml milk — warm

Method:

Combine the raisins, 15 ml sugar and water and stand in a warm place until the raisins have risen. This will take approximately 2 days. Strain, and reserve liquid. Sift the flour, add the sugar and aniseed. Make a hollow in the middle and add 600 ml of the strained liquid. Sprinkle a little flour on top and leave to rise in a warm place for about 1 hour.
Melt the butter. Beat the eggs and add the warm milk. Knead the butter and egg mixture into the flour until the dough is firm. Spread a little melted butter on the top and leave to rise overnight.
Make the buns in the morning and pack together in pans. Leave to rise until doubled in size, then brush on a little milk and sugar solution. Bake in a preheated oven at 200 ºC for about 1 hour. Turn out and serve with butter. Makes 30.
