Moroccan spiced sweet potato stew

Ingredients (12)

15.00 ml fresh chillies — 573
1.00 onion — sliced
2.00 garlic — cloves, crushed
7.00 ml coriander — ground
7.00 ml cumin — ground
2.00 ml cayenne pepper
2.00 sweet potatoes — medium, peeled and cubed
410.00 g tinned tomatoes — plum
6.00 courgettes — sliced
410.00 g kidney beans — tinned, drained
30.00 g fresh coriander — chopped
50.00 ml raisins — or sultanas

Method:

Heat oil in a large saucepan.
Add onion and sauté for five minutes until tender.
Add garlic and spices and stir for a minute.
Add the potatoes, tomatoes and courgettes and bring to the boil.
Reduce heat and simmer for about 20 minutes until tender.
Add the beans, coriander and raisins and stir until heated through.
Serve with a dollop of natural yoghurt and naan bread.
