Moroccan kebabs

  • 650
    beef mince
  • 3
    garlic cloves, crushed
  • 1
    fresh ginger, peeled and chopped
  • 5
    ground cumin
  • 60
    chopped mixed fresh herbs parsley, mint and coriander
  • 1
    jumbo egg
  • salt and milled black pepper to taste


Mix all ingredients together in a bowl, adding salt and pepper to taste.

Shape handfuls of mixture into sausages around bamboo or metal skewers.

Grill for 10 to 15 minutes, or until cooked through and nicely browned outside, turning frequently.

Serve with coconut rice (see tips) and sliced ripe oranges, garnished with coriander or parsley.
