Ingredients (10)

1.00 pork — leg
250.00 ml vinegar
250.00 ml wine — dry white
2.00 garlic — cloves, crushed
1.00 onion — sliced
15.00 ml paprika
1.00 bay leaves — crushed
5.00 ml red chilli — chopped
0.00 sea salt and freshly ground black pepper
200.00 g ham — smoked, thinly sliced

Method:

Prick the leg of pork all over with a fork. Mix the vinegar, wine, garlic, onion,
paprika, bay leaf, chilli, salt and pepper
and rub the meat with half the mixture, reserving the rest. Put the meat in a non-metallic container and cover with clingfilm. Leave the leg to marinate in
the fridge overnight.

Preheat the oven to 160 degrees. Remove the leg from the container and discard the marinade. Put the meat in a roasting pan, cover with the ham slices and arrange the potatoes around the meat. Pour over the remaining marinade and roast the leg, allowing 25 minutes per 500 g meat plus 30 minutes extra. Baste the leg frequently with the marinade while roasting.
