Mole heaps

  • 8
    large potatoes
  • 50
  • 10
    baking powder
  • salt and pepper
  • 250
  • 20
    grated Cheddar cheese


Preheat the oven to 180 ºC (375 ºF). Grease a fairly large oven dish with margarine. Peel and cook the potatoes until done in boiling salted water. Drain and mash. Add the baking powder and seasonings to taste, as well as a little of the cream. Mix well until light and fluffy. Using an ice cream scoop, spoon balls of the potato mixture into the oven dish and pour the remaining cream over the potato balls. Sprinkle with the cheese and bake for 20 to 25 minutes. Serve hot.
