Mock cream

  • 1
    egg white
  • pinch salt
  • 50
    castor sugar
  • 1
    green cooking apple, skinned.


Beat the egg white and pinch of salt till soft peaks are formed. Add the castor sugar a little at a time while beating continuously. Beat well till the mixture is thick and light. Process the apple in a food processor or grate very finely. Fold into the egg white mixture. Use instead of cream, preferably the same day. Makes 6 servings.
