Mock cheesecake

  • 200
    (1 packet) ginger biscuits, crushed
  • 60
    margarine, melted
  • 2
    eggs, separated
  • 397
    (1 can) sweetened condensed milk
  • 1
    orange, juice and rind
  • 30
    castor sugar
  • raspberries to garnish
  • icing sugar to dust


Mix crushed biscuits with melted margarine.
Press firmly into a greased 20 cm pie dish and place in the fridge to chill.
Meanwhile, beat egg yolks with condensed milk.
Add the orange juice and rind, and mix well.
Beat the egg whites with the castor sugar until stiff and glossy.
Mix half the egg whites into the yolk mixture to lighten it and fold in the remaining whites.
Pour into the chilled shell and bake in a 160 °C preheated oven for 25 minutes.
Allow to cool completely.
Garnish with fresh raspberries and dust with icing sugar.
