Mock baked fish

  • 500
    cake flour
  • 10
    baking powder
  • 10
    fish spice
  • salt and pepper
  • finely chopped parsley
  • 2
    eggs, whisked
  • 250
  • 6
    slices bread, crusts removed and quartered


Combine the cake flour, baking powder and fish spice in a mixing bowl. Season to taste with salt and pepper. Add a little parsley, the whisked eggs and just enough water to form a thick batter. Dip the bread quarters in the batter and fry in heated oil until brown on the outside. Drain on paper towelling and serve with potato chips and a tomato salad. Makes 24 bites.
