Mocha delight

    dark chocolate

    strong black Nescafé coffee

    large eggs, separated
  • 50
    castor sugar


Melt chocolate and coffee together in a pan over low heat. Stir until smooth. Remove from heat. Stir in butter and egg yolks one by one. Heat sugar and 100 ml water in a saucepan. Simmer until syrup reaches firm-ball stage (a small amount dropped into cold water should form a firm ball when pressed between your fingers). Remove from heat. Whisk egg whites until stiff peaks form. Slowly pour hot syrup over egg whites, beating continuously, until mixture is cool. Fold chocolate mixture into egg whites. Divide between 6 espresso cups. Chill until set.
