75.00 ml castor sugar
125.00 ml instant coffee powder
500.00 ml cream — fresh
125.00 ml sherry — sweet
200.00 g ginger biscuits
100.00 ml edible decorative balls — silver and gold

Method:

Beat together the sugar, coffee powder and cream until stiff. Pour the sherry into a saucer.

Dip the cookies in the sherry one by one. Sandwich the cookies together with a little whipped cream mixture and arrange them in a long roll on a plate.

Cover the outside of the roll with the remaining cream. Draw lines with a fork so the dessert resembles a log and decorate with silver and gold balls.
