Mocha And Ginger Christmas Log

    ml
    caster sugar
  • 125
    ml
    instant coffee powder
  • 500
    ml
    fresh cream
  • 125
    ml
    Old Brown sherry
  • 200
    g
    ginger biscuits
  • 100
    ml
    silver and gold balls to decorate
 

Method

 
Beat together the sugar, coffee powder and cream until stiff. Pour the sherry into a saucer.

Dip the cookies in the sherry one by one. Sandwich the cookies together with a little whipped cream mixture and arrange them in a long roll on a plate.

Cover the outside of the roll with the remaining cream. Draw lines with a fork so the dessert resembles a log and decorate with silver and gold balls.
