Ingredients (5)

quantity basic tomato sauce
700.00 g carrots — scraped and sliced into rings
250.00 g cauliflower — florets
500.00 ml sweetcorn
1.00 green pepper — deseeded and diced
2.00 garlic — cloves, crushed

Method:

Prepare the tomato sauce as described. Boil the carrots in water until slightly tender, add the cauliflower and boil until the vegetables are just tender but still crisp. Drain. Add the sweetcorn kernels, green pepper and garlic along with the boiling sauce and bring to the boil once more. Spoon into sterilised jars while still hot and seal immediately.
Makes about 2 litres salad.
