Mixed vegetable dish

    cabbage, shredded

    large carrots, peeled and cut info strips
  • 1
    onion, sliced
  • 2
    cloves garlic, crushed
  • oil
  • 2
    large tomatoes, skinned and diced
  • 125
    tomato sauce
  • 2
    cayenne pepper
  • salt and black pepper to taste

Boil the cabbage and carrots in a little water until just soft but still crisp. Sauté the onion and garlic in a little oil until soft. Add the tomatoes and simmer until a purée forms. Add the tomato sauce, cayenne pepper and vegetables. Heat until warmed through, stirring occasionally. Season to taste with salt and pepper. Serves 4.
